Loukoum Aperitif

Loukoum, or what we call ‘raha’ in Beirut, is a confection made of starch and sugar usually found in two traditional flavours, rose and mastic. Generations passed but the old tradition of smashing a piece of it between two biscuits remains. It was our favorite dessert as children.Those same kids turned into adults and wanted to revisit this with the addition of some of the old people’s stuff.

How to make this:

  • Freeze some loukoum.

  • Crush them in a lowball glass. Two pieces are advised but adjust the quantity based on the level of sweetness and fragrance you’re after.

  • Top up with WATA Brut and serve with a small spoon to scoop up the perfume garden at the end.
